The BEST Whoopie Pie Recipe!


This is my late Aunt Karen's recipe. It is super easy and so good! She use to bring these to every event she attended and they went like hot cakes. You will be the hostess with the mostess if you serve these at your next event.

The recipe below is a legit copy paste job from an email my aunt Karen had sent me.

I think she would be happy to know that I shared this with the world, boy do I miss her laugh!

Ingredients:

Pies:

2 c flour 1/2 tsp b. powder 1/2 tsp b. soda 1/2 tsp salt 1 c sugar 1/2 c cocoa 1/2 c shortening 1 egg 1 tsp vanilla 1 c milk Filling: 1 lge fluff container 3/4 c shortening 1 tsp vanilla 1 3/4 c conf sugar splash of milk bake 350 **Remember, I don't measure my filling at all....I tried to give you measurements in what I think I put in. You want it to be very thick....should be very hard to stir. Enjoy xoxox Karen

Simply mix all the pie ingredients until well combined. Scoop out spoonful's (I use an every day spoon from my utensils drawer) on a cookie sheet and bake at 350 for 8-10 mins (until done).

Allow to cool fully.

While pies are cooling start making the filling. Combine filing ingredients and per Karen's notes it should be very thick. Once mixed, I allow to set in the fridge while the pies cool. Once they are fully cooled, using a butter knife spread a generous amount of filling on a whoopie pie and simply add a second whoopie pie to the top.

Store is air tight container in fridge.

Pro Tip:

I always double the cake recipe.

Allow filling to set in fridge a bit (20 mins or so) before filling whoopie pies.

Use cupcake liners for whoopie pies.
